I do most of my long-term work in Obsidian, and that's still my go-to for organizing large amounts of data. But what I've discovered is that I don't like referencing it when I'm in the middle of GMing a game. I want small, bite-sized pieces of information physically in front of me, so I've started printing my Adversary/Environment stat blocks as cards, and I think I'm going to put all my other session notes on index cards as well.

I feel the same way. My larger notes are to "cumbersome " to reference during gameplay

Printing out cards is a good idea! If you don't want to use the printer ink, you can also buy packs of blank index cards to write one with pencil/pen.
